As of late our home has been a bit of a battle ground…yes, the battle of the veg. My 2 year old, Hannah is so stubborn. for the most part, if it’s green she won’t touch it. Awhile back I instagram-ed this picture of Hannah asking for suggestions from other mamas.
“How the heck do you get your kids to eat their veggies?” I got a few really good suggestions. Some of my new favorite ways are to either blend them into a smoothie with a little protein powder, or bake them into sweet breakfast treats! Although one of my favorite comments from the post was by my friend Britton which read: “I prefer the lecture method: “There are kids in this world with no food! You are not one of them. There are fat adults with bad habits. You do NOT want to be one of them! So man up, cowboy up, get’er done foo.” or this one from my buddy Christine, “She makes me feel normal. Haha!” Well then I suppose these veg muffins are for adults too! These muffins are so yum! I love to eat them with my mid morning coffee! I will say I prefer them warm, so if they aren’t right out of the oven, I suggest microwaving for just 10 seconds before enjoying. I found these little gems over on my dear friend Brenna’s blog.
